Turkey with Apricot and Macadamia Stuffing

Came across this recipe for turkey. Thinking of adapting it for roast chicken, since I have some macadamia nuts sitting in the fridge.

Turkey

1 large turkey - size depends on the number of guests

Apricot & Macadamia Nut Stuffing
15 gm butter
1 brown onion
1 garlic clove
200gm apricot
100 gm macadamia nuts
1 loaf bread - cubed 2 eggs
Salt and pepper to taste

Method

Turkey
Cook the turkey for 20 minutes for 500 grams.
(Our turkey was nearly 5 kilos, so we cooked it for just over 3 hours and it was delicious! )

Apricot & Macadamia Nut Stuffing
Roast macadamia nuts in the oven until light brown, be careful not to burn.
Melt butter in a frying pan and add chopped onion, crushed garlic and sauté for 5 minutes.
Remove mixture from heat and combine with roasted macadamia nuts and chopped apricots, cubed bread and eggs. Season to taste and stuff turkey.
